How to Make Authentic Dominican Habichuelas Guisadas (Stewed Beans)

INGREDIENTS:
3 garlic cloves
1 teaspoon Dominican oregano
1 tablespoon oil
1 tablespoon sofrito
⅓ red onion
⅓ red bell pepper
⅓ bell pepper (optional for different colors)
1 tablespoon tomato paste
1 chicken bouillon cube
2 culantro leaves
4 cups red beans, drained, precooked or canned
5 cups water
¼ small pumpkin (auyama)
1 small bunch fresh cilantro
PREPARATION
In a mortar and pestle, smash garlic cloves with oregano until crushed.
Heat a large pot over medium heat, then add the oil, sofrito, crushed garlic and oregano, bell peppers, onion, and tomato paste. Crumble the chicken bouillon cube into the pot and then add the culantro. Stir to combine.
Add the beans, water, pumpkin, and the cilantro bunch on top. Cover the pot, and let it simmer for 20 minutes.
After 20 minutes, remove some of the vegetables from the pot and blend them until smooth. Return the blended mixture to the pot to thicken and enrich the sauce.
