BELGIAN WAFFLE LAYER CAKE Serves: 10-12 MASCARPONE CREAM 1 ¾ Cups (210g) powdered sugar 2 tsp vanilla extract or vanilla bean paste 1 Cup (8 Oz, 225g) mascarpone cheese, cold 2 ¼ Cups (540ml) heavy whipping cream, cold WAFFLE AND BERRY LAYERS ½ Cup strawberry jam 2 Tbsp water ¼ Cup fresh raspberries, halved ¼ Cup fresh blackberries, halved ¼ Cup fresh blueberries, halved ¼ Cup fresh strawberries, quartered ¼ Cup of the above berries, kept whole for garnish 4 Belgian waffles (homemade or made with mix), cooled to room temperature INSTRUCTIONS Make the mascarpone cream: place all four ingredients into a stand mixer fitted with the whisk attachment and mix together on low until combined. Turn the mixer to high speed and whip until it becomes the consistency of whipped cream with stiff peaks, 2-3 minutes. In a small bowl, mix the strawberry jam and water together and set aside In another small bowl, mix together all of the halved and quartered fresh berries. Assembly: place the first Belgian waffle onto a serving plate or cake stand. Add ¼ of the strawberry jam on top. Pipe or spread a layer of mascarpone cream on top of the jam, then top with ⅓ of the fresh mixed berries. Place the next waffle on top and repeat filling and stacking until you reach the final mascarpone cream layer. Top with the whole berries. Serve within 2 hours.
